champignon salad: slice (use a mandoline) the champignons (make sure they're still closed) and season with lemon juice, a pinch of salt and good quality extra virgin olive oil.
tuna tartare: you need to make sure your tuna is fresh, then chop it with a chef's nice, season it with some lemon juice (you can also add a very small amount of sauce made with yogurt, oil and mustard powder) then mix it with the tuna. Then prepare a basic topping with avocado, lemon juice, salt and tabasco, squeeze it with a fork - place the tuna on the plate, inside a ring, then top with the guacamole mix, remove the ring. Decorate with chives.|||there is a gourmet raw food magazine but the name alludes me.
sorry my weight management thyroid specialists physician only eats raw veg. and that's a great endorsement but I just make

Oriental Lettuce Wraps
dice small or grate:
carrots, celery, brocoli stalks, cauliflaur, mushrooms,
or any variety of veggies that you prefer. Toss with a good oyster sauce or an organic tamari. Add fresh bean sprouts and toss. Spoon veggies into fresh, washed lettuce leaves of your choice. Roll cabbage roll style and enjoy. My children love these for lunches and they are wonderful for an appetizer when serving a multi-course meal.

Greek Lettuce Wraps

tomatoes, cucmbers, onion, (a little smashed garlic)
toss with a good oil (I prefer extra virgin olive)a little lemon juice, add fresh basil or any herbs that you prefer. Spoon veggies into fresh, washed lettuce leaves. Add a few good olives and grated firm tofu. Roll cabbage roll style and voila!! a greek roll.

Mexican Wraps

Now be creative. Add some soft or firm tofu, peppers or whatever your tastebuds would like. Roll in washed lettuce leaves.

Quick and Simple Apple Pie

This Apple Pie uses very few ingredients, it is easy to make and tastes wonderful!

Ingredients:

Crust:
1 1/2 cups sunflower seeds
3/4 cup raisins
1 tablespoon carob powder

Filling:
5-6 medium sized apples peeled and cored (I use green apples)
3/4 cup raw, unfiltered honey (preferably with pollen)
1 tablespoon Cinnamon
juice from 1/2 meyer lemon
shredded coconut
dash of cloves (optional)
1 seasonal fruit (kiwi, banana or other)

Directions:

Make the crust by placing the sunflower seeds, raisins and carob powder in a food processor and process with the "S" blade until finely ground and mixture sticks together.

Line a 9" pie pan with this mixture and form the crust.

Take the apples, and pulse chop with the "S" blade into small pieces. (Be sure not to overdo it and make apple sauce!)

In a bowl, mix the chopped apples, cinnamon, lemon juice and honey and dash of cloves together.

Scoop the mixture into the pie crust. Save the "juice" that remains and drizzle over pie when served. Level out with a spatula.

Sprinkle on Coconut flakes on top of the mixture.

Cut seasonal fruit into thin slices and place on top of the coconut flakes in the center of the pie!

For best results, place in refrigerator for 1 hr to allow pie to set.

Enjoy!|||sorry.i dont have so much time|||Raw foods for vegan is pretty much using vegetables creatively and soaking your seeds and nuts to eat, and then if you want you can dehydrate grains to make a cracker bread.
Easy spaghetti: take zucchini and with a peeler peel noodles. Sauce is just taking fresh tomatoes and putting it through a blender with some fresh basil. I would also add some diced green and/or yellow bell pepper for color, and then add some nuts (perhaps pine nuts) or sprouts for the protein boost.
Cream of vegetable soups are just cashew nuts (soaked overnight) with vegetables in a blender whirled up into a creamy thick shake soup. Add some diced peppers and tomatoes and yum!
And fruit smoothies are great also for your sweet rewards. Fruit with silkien tofu and raw agave nectar are a real boost of protein and lots of antioxidants for your body. Smoothies are getting to be so mainstream now.
