Freeze Dry
to dry (as food) in a frozen state under high vacuum especially for preservation Freeze drying (also known as lyophilization) is a dehydration process typically used to preserve a perishable material or make the material more convenient for transport. Freeze drying works by freezing the material and then reducing the surrounding pressure and adding enough heat to allow the frozen water in the material to sublime directly from the solid phase to gas.
Evaporation is the process by which molecules in a liquid state (e.g. water) spontaneously becomes a gas (e.g. water vapor), without being heated to the boiling point. It is the opposite of condensation. Generally, this manifests as the gradual disappearance of the liquid, when exposed to a significant volume of gas.|||Dehyration is done with heat, Freeze drying is just that the product is frozen and the air removed and the product is then processed and the evaporation like in distilled water, is heated and then the vapour is removed and refined like with a concentrated product..
Evaported Milk is just heated to remove the excess moisture, Taster's Choice Coffee is a freeze dried product, dehydrated products include raisins, apple, apricots and prunes. All have some level of water or moister removed to process the food.
As the one person said the Greeks and Ancient Romans started the dehyration process and evaporation was a later issue, freeze drying was discovered around the mid -1800's.
